60 year-old traditionally (Gohelet) conducted Bobal vines in Torre region, 750 m high on clay-limestone soil

Ageing:
12 months in French oak barrels and then aged around 12 more months in bottle.
Harvesting:
The maturing of the grapes is closely checked in order to find the optimal moment for harvesting so that it expresses the singularity of the variety and its
terroir facts. Manual harvesting in the first daylight hours.
Elaboration:
After an 8'C maceration during the first days, a slow and uniform fermentation follows, It is afterwards removed from the thick lees for a malolactic
fermentation in French oak.
Bottling:
After ageing for 12 months in French barrels, it is bottled and left to rest for at least 12 months for a fine and rounded finish.
Taste:
Cardinal red garnet colour and medium-high intensity. A toasted, spiced and coffee bouquet with mineral hints, typical from its terroir with balsamic notes of the Mediterranean forest herbs and underbrush and a final reminiscence of ripe berries. It
is a full wine in the palate, silky with some acidity which balances the whole taste.
